Sugar Free Brownie Recipe A sugar free dessert recipe that's so decadent and rich, you won't believe it's sugar free!4 ounces/squares unsweetened chocolate 1 stick butter 4 TBSP
extra virgin coconut oil
1 cup
erythritol*
1/2 level tsp
stevia powder
1 tsp
organic vanilla extract (a better deal than the "regular" vanilla in the grocery store!)
2 large Omega-3 (or free range) eggs 1/2 cup
sprouted spelt flour
1/2 tsp baking soda 1/4 tsp salt 1/2 cup chopped raw walnuts
Preheat the oven to 350 degrees. Lightly oil an 8-inch square pan with coconut oil or butter. (A glass baking dish is best. Metal pans, especially dark pans, can cause the edges to burn.) Melt chocolate squares, butter, and coconut oil over low heat in a heavy-bottom saucepan. As soon as this mixture is melted, add the erythritol and stevia powder. Stir until erythritol is dissolved. Let mixture cool to room temperature. Put the room-temp chocolate mixture in a medium bowl and add the vanilla. Beat for 30 seconds using a hand or stand mixer. Beat the eggs in one at a time. In a separate bowl, mix the flour, baking soda, and salt together. Stir the dry ingredients into the wet until blended. Fold in the walnuts. Spoon the batter into the oiled pan and bake for 30 minutes (no more!). *Note: if the flavor and texture aren't quite what you'd like, you can replace 1/2 cup of the erythritol with 1/2 cup of Sucanat (a natural, granulated sugar cane product).
