POP’S Sugar Free Fat Free Mini Energy Muffins

INGREDIENTS:

1 c. whole wheat flour
-
1/2 tsp. baking soda
-
3 c. quick cooking oats
-
3 egg slightly beaten
-
1/2 tsp. cinnamon
-
2 c. Splenda granulated
-
¾ c. sugar free maple syrup
-
½ c. canola oil

¾ c. skim milk
-
1 tsp. vanilla
-
1 c. raisins
-
1 c. no salt peanuts (chopped)
-
1 c. shaved almonds (chopped)

DIRECTIONS:
-
1. Sift together flour, soda, cinnamon, and Splenda.

2. Stir in oats, nuts, & raisins.
-
3. Combine egg whites, oil, milk, syrup, vanilla.
-
4. Mix all ingredients well (electric mixer is recommended).
-
5. Drop 1 tablespoon batter in well oiled miniature muffin pan.
-
6. Bake in a preheated 375°F for 17 minutes.
-
Servings: 96(1 TBSP cookie batter in miniature muffin pan)
I recommend spraying canola oil on muffin pan.

Elena's comment: Thanks for the great recipe, Bill! For anyone who wants to use something other than Splenda for sweetening, I think you could substitute something like xylitol or erythritol measure-for-measure. And glycerin could be a naturally sugar-free liquid sweetener alternative to an artificially sweetened syrup.
