We only have one recipe here right now, but it's our family's favorite out of all the muffin recipes with flax seed.
Did you know that there is a close connection between flax seeds and weightloss? Flax seed has very few carbohydrates (about 1.6 net grams of carbs per CUP), but lots of fiber. So it fills you up, and keeps you full. An extra benefit is its high amount of Omega-3 fatty acids, which are known for their cholesterol-lowering and cancer-fighting abilities.

More muffin recipes with flax seed will come soon, but for now, here's one that will show you how delicious flax seeds and weightloss can be! Blueberry Flax Seed Muffins

1-1/4 cups sprouted spelt flour 3/4 cup
coconut flour
1 cup
ground flax seed
(This is the most economical way to buy flax seeds, but you'd need to grind them yourself in a blender or food processor; if you want to buy them pre-ground, you can find them at this link, as well. Search for "FiProFlax".) 1 tsp aluminum-free baking powder 1/2 tsp
stevia powder
2 tsp baking soda 1/2 tsp salt 1-1/2 cups of organic yogurt 3 large Omega-3 (or free range) eggs 3 TBSP
extra virgin coconut oil
2 TBSP butter, softened 1/2 cup
erythritol
1 tsp
organic vanilla extract (an even better deal than in the grocery store!)
1 cup blueberries (if using frozen blueberries, thaw and drain before using) 1/2 cup chopped raw walnuts
Preheat oven to 375 degrees. In a large bowl, mix flours, flax seeds, baking powder, stevia, baking soda, and salt. In a separate bowl, cream together the butter and coconut oil. Add the erythritol and cream together. Add eggs one at a time, beating after each addition. Add yogurt and vanilla and mix thoroughly. Add the dry ingredients to the liquid ingredients and mix together thoroughly. Fold in the blueberries and walnuts. Spoon the batter into medium muffin cups to about 3/4 full. Bake for 20 minutes.
