Toasted Low Carb Coconut Pie Crust
It will be your FAVE low carb recipe.
Use this healthy low carb recipe for any pie filling.

ALL of the ingredients in this low carb coconut pie crust are from the coconut! What a wonderful, nutritious, versatile seed.

As with my other recipes, you can find the ingredients in your local health food store (also in some grocery stores now), or you can buy online. Follow my links to find the best deals on these products.

This is a great low carb recipe that will quickly become your favorite! Use this healthy low carb recipe with my famed Uncooked Chocolate Pie, which is a fantastic sugar free dessert recipe.

Low Carb Coconut Pie Crust
Be sure that your coconut flakes are at room temperature (not cold), or they'll seize the oil and won't mix well.

1.5 cups unsweetened coconut flakes
1/3 c coconut flour (as an alternative, take 1/2 cup of the coconut flakes and grind in your blender or food processor until very fine, like flour)
1/4 cup (or 4 TBSP) extra virgin coconut oil
1/4 tsp stevia powder

Preheat oven to 325 degrees Fahrenheit. Mix all ingredients together and press into pie plate. Bake for 10-15 minutes, or until lightly browned. Watch the crust carefully. Coconut can burn quickly.

Cool on wire rack, then add pie filling of your choice. I recommend my Uncooked Chocolate Pie.
