cookies made with stevia, healthy oatmeal raisin cookies, sugar free cookie recipe


Although I only have one recipe for cookies made with stevia posted here so far, it's one of the best.

It's fairly low carb and high fiber, too, and uses only the best, healthiest ingredients. So you can be confident knowing that you're giving your family the best!

Oatmeal Raisin-Walnut Cookies
Virtually sugar free, and much lower carb than the original!

1 cup oatmeal "flour" from steel-cut oats (get these in the bulk section of your health food store, or online by clicking here; grind them in a blender until they're a fine consistency like flour)
1 cup sprouted spelt flour
6 TBSP butter, softened
2 TBSP extra virgin coconut oil
3 TBSP honey
1/2 cup erythritol (a better version of xylitol)
1/2 tsp stevia powder
1 large Omega-3 (or free range) egg
3/4 tsp salt
1/2 tsp baking soda
1/2 tsp aluminum-free baking powder
3/4 cup raisins
1 tsp organic vanilla extract (MUCH better price than the grocery store)
1 cup coarsely chopped raw walnuts

Preheat oven to 350 degrees Fahrenheit. Grease one non-insulated baking pan.

In medium mixing bowl, combine ground oatmeal, flour, stevia, salt, baking soda, and baking powder. Set aside.

In a large mixing bowl, cream together (using handheld mixer) the butter and coconut oil. Add the honey and erythritol and blend well. Add the egg and beat well.

Add the dry ingredients to the butter mixture and mix just until blended. Do not overmix, or the dough will become tough.

Add the raisins and walnuts and mix with a spoon until blended.

Drop cookie dough onto cookie sheet. I use a heaping teaspoon--you can make them any size you want! Bigger cookies will take a few minutes longer to cook, though. Leave a good inch between each cookie for proper heat distribution. Flatten each dough ball with a fork or spatula.

Bake for about 12 minutes. Enjoy!
